In most cases, the rehearsal dinner is attended by the bride and groom's family and close friends and the attendants' of the wedding and their significant others. Exceptions can always be made, depending on how many people you want invited to the rehearsal dinner and what you can afford. Some families use the rehearsal dinner as a mini family reunion and invite family and all family members who are coming to the wedding from out of town. Your rehearsal dinner can be as large or as small as you'd like it to be - just be use whoever is paying (usually the groom's family) is well aware of the number of guests and costs and is willing to provide for the extra guests.
Be sure to let your caterer know ahead of time that you would like the reception leftovers wrapped up to take home with you and your family. If you are leaving on your honeymoon right after the wedding, let your family and friends take home the leftovers to enjoy. You've paid for all of the food so there is no reason for you to not take the leftovers home with you to enjoy.
Out of town guests are usually expected to pay their own way if they are attending your wedding - including their lodging, food, and travel expenses. If you financially able to acquire lodging and other travel expenses for your guests, they will of course be very grateful to you. You should be sure to find out if your guests are able to attend before asking as well, so you do not impose on your out of town guests. No matter what, ask around at local hotels for discounted group rates for your wedding guests.
